
Serves 6-8 small cups
Vanilla Pastry Cream
4 organic egg yolks
2 ½ T. tapioca starch(or cornstarch, kuzu, arrowroot)
1/3 cup coconut palm sugar
1 1/3 cups unsweetened coconut milk(or milk of choice)
2 T. pure vanilla extract
1 package Mimiccreme Healthy Top
Combine all ingredients in a saucepan and bring to a boil, whisking frequently, and them simmer until it becomes thick. Remove from heat. Transfer to another bowl to cool. Prepare Healthy Top as directed and mix in with cooled pastry cream.
Dirt Crumbs
1 package Zema’s GF Vanilla Cocoa Teff baking mix
1 T. olive oil
¼ cup organic egg whites
1 t. organic apple cider vinegar
4 T. pure maple syrup(or agave nectar)
1 ½ t. pure vanilla extract
Prepare Zema’s Vanilla Cocoa Teff flatbread recipe as directed on back of package. You may make this weeks in advance, enjoy some flatbread and freeze atleast 6-8 pieces. If frozen, take out and lay on papertowel overnight to dry out. If fresh, lay on papertowel overnight as well.
Preheat oven to 275 degrees. Place flatbread pieces on cookie sheet and bake for 1 hour, or until hard. Cool. Place flatbread into food processor and pulse until crumbs form.
Assembly
1 package Yummy Earth Gummy Worms
Use mason jars for fun, or regular pudding sized tall glasses. Place a large spoonful of pastry crème in jar. Place gummy worms inside to hide. Place dirt on top. Garnish with a couple more worms on top.
